You need: 4 blood oranges... zest and then juiced 120 g unsalted butter 190 g caster sugar 3 egg lightly whisked Method: Zest the blood oranges first and then juice them. Place the juice, zest, butter and sugar into a heavy based saucepan on a low heat, stir until the sugar is dissolved. Remove from heat and add whisked eggs. Return to a gentle heat, stirring very regularly until the mixture becomes thick... be careful... do not let it boil though as it will curdle.
