(Can be prepared 1 week ahead. Cover and keep refrigerated.) FOR FROSTING: Beat powdered sugar and 1 1/4 cups lemon curd in large bowl just until blended. Beat cream in medium bowl until firm peaks form.

Hello all, Although our culture and traditions are rich, there are a lot of 'reasons' behind our daily work/food/culture that has been lost. An interesting thought I have always had is why we have payasam before the curd-rice, while in most other traditions the dessert is always served last. Blood oranges are only in season for a short while during winter and they really are so beautiful it seems a shame not to hunt them out from a specialty grocer and make some of this delicious curd that is wonderful as a tart or sponge filling or served with hot scones and cream or a dollop on thick toast. You need: 4 blood oranges... zest and then juiced 120 g unsalted butter 190 g caster sugar 3 egg lightly whisked Method: Zest the blood oranges first and then juice them. Place the juice, zest, butter and sugar into a heavy based saucepan on a low heat, stir until the sugar is dissolved. Remove from heat and add whisked eggs. Return to a gentle heat, stirring very regularly until the mixture becomes thick... be careful... do not let it boil though as it will curdle.
